Chow Mein, Chicken Wings and Cheeseburgers: Recalling
Downcity Chinese in the Postwar Era

The Culinary Arts Museum and Brown University sponsored a
3-day series of events showcasing Asian food, from Tofu to Suckling Pig, Crayfish
to MSG, with demos and tastings. There was a keynote lecture by Darra
Goldstein, founding editor of GASTRONOMICA, the preeminent scholarly food
journal. Students from John Nicholas Brown Center Public Humanities Program,
mounted an exhibition at the Culinary Arts Museum on Providence's postwar
Chinese restaurants, the families that founded them and the ups and downs of
their enterprises.
